Ingredients:

  • 200g chicken breast, diced
  • 150g whole wheat pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste
  • 200g cherry tomatoes, halved
  • 50g spinach leaves
  • 2 tablespoons nutritional yeast (for a cheesy flavor)

Instructions:

  • Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the diced chicken breast to the skillet and season with salt, black pepper, oregano, and basil. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  • Add the cherry tomatoes and spinach to the skillet, cooking until the spinach wilts and the tomatoes soften, about 3-4 minutes.
  • Stir in the cooked pasta and nutritional yeast, mixing well to combine all ingredients. Cook for an additional 2 minutes to heat through.
  • Serve hot, garnished with extra black pepper if desired.
